Fish with Tarragon Tomato Sauce

Ingredients
1 lb Mahi Mahi Fillets
1 cup chopped onion
1 tsp minced garlic
14 oz diced tomatoes, no salt added
1/4 cup lemon juice
1/4 cup water
1 T dried parsley
1T dried chives
2 tsp dried tarragon
1/2 tsp salt
1/4 tsp pepper

Directions
Simmer all but fish for 15 minutes. Add fish, cover, simmer 10 minutes more, turning fish once.
