Cuban Black Beans with Pork and Brown Rice
Ingredients
1 Tbsp olive oil
1 cup diced bell pepper
1/2 cup diced onion
1 tsp garlic
14 oz can diced tomatoes
1/2 tsp oregano
1/2 tsp cumin
pinch of cayenne or 1/8 tsp black pepper
1 bay leaf
2 cups cooked black beans
8 oz diced leftover pork roast
1 1/3 cups cooked brown rice
Directions
Cook rice ahead of time and keep hot. Saute pepper, onion, and garlic in olive oil. Add tomatoes and spices. Simmer 5 minutes. Add pork and beans. Simmer until heated through. Remove bay leaf. Serve 1/3 cup of rice with 1 cup bean/meat/tomato mixture.

Made this tonight -very easy and yummy! I happened to have some leftover duck on hand, so used that instead of pork.
